A Priorat wine producer needed a new winery on an L-shaped plot in the heart of the village of Gratallops, adjacent to the church. The challenge was for the building itself to contribute to "biodynamic" winemaking from passive principles.

Two areas are created: a large rectangular volume, the nave, where production is located, and the remaining Z-shaped space, the passage, an interior street that surrounds the nave following the stone party wall. The nave is the central space of the winery and the most demanding in terms of hygro-thermal stability; its triple height favours the stratification of hot air in the upper part, away from the vats; the ceramic load-bearing walls, up to 1.75 m thick, with multiple layers, create air circulation chambers that cool the space; the roof acts as a cooling ceiling, taking advantage of the night sky radiation to cool down by means of a closed water recirculation system.

The roof acts as a cooling roof, taking advantage of the night-time radiation from the sky to cool itself by means of a closed water recirculation system.on the ground floor, cavities open up like "chapels", visually connecting the nave and the passageway.the passageway is a thermal transition to the cellar. Its roof is vegetated, stores rain, cools the atmosphere and avoids direct solar radiation. The façades facing the street are clad with a thin layer of lime mortar which helps to contextualise the building in the village, the external presence is more vernacular, but on entering the building systems are deconstructed and show the nature of the building.
